I think the the fuel is injected after the temperature sensor so how does the DME know the cylinders are actually getting lower air temps so it won't cut power?

It is not port injection but right into the combustion chamber and the only thing the fuel is cooling is the injectors. I saw a video of a Supra B58 where they changed it TO port injection but left the old injectors in the cylinder head. On the third dyno run one of the injectors melted and flew out of the cylinder head.
