Max. torque = 1800 RPM. Therefore 2000 RPM is actually a bit high. Anything above 1800 RPM renders the brakes unable to hold the car any further back. It may be too low for naturally aspirated cars, but you can launch a turbo effectively beginning 1500 RPM. Turbo launches are glorious. You don't even necessarily need to rev the new turbo angines to 2000 RPM, but the few seconds that you do helps spool (ready) the turbos and make the launch much more efficient.

Brakes can hold it at peak power easily, bmw worked that out themselves

You may make peak torque at 1800, but you launch at 2k and slip WAY below 1800

Besides... They're not at peak boost by 1800rpm are they? Heck, theyd barely be on boost at 2k, and you DEFINITELY want to launch on boost...

Peak torque would be where you hit peak boost.

Lastly, launching isnt about peak torque, it's about as many revs as you can stack on without lighting a fire...

Even tuned n54's will launch 3-4k even..

Does the m235i manual come with launch control or is it just for the automatics?

No launch control for something that is manually controlled - like a manual and clutch. It is trickery for automatic / dual-clutch transmissions.
