I'm thinking non-runflats on 2021 230i MSport - ordering tips?

Is there anything specific I should be considering as I finalize tire/wheel choice?

I see that one option has different sizes front/rear. Thoughts?

I would suggest going up a half inch in wheel width, with stock tire width (225/245 on 8/8.5" wheels). Or consider staying square with 8"-225 all around, lets you rotate front>rear. Factory puts the widest tire possible on those 7.5/8 wheels, which makes them a little more mushy for handling. There are many people on here who go with wider rubber as well, but it doesn't really net any handling advantage on the street, and starts to get into fitment problems. These cars really notice a reduction in unsprung weight, so lighter wheels are a worthwhile spend. I did OZ's in 8/8.5, both et40, saves about 2.5-3.5# vs stock with non-rft, you'll save more since runflats are heavier.
