Will that rear mount at the top of the shock potentially rub the rear tire if we are running an aggressive/wide tire?
If we don't use the mount we have to widen the hole in the car, correct?

You will likely have to run a really wide wheel/tire for that to happen. If you rub on the mount, you are likely rubbing on the inner wheel well as well.
