Degreasing an engine isn't uncommon and if done correctly, shouldn't be an issue as all eletrical sensors and such get covered.
That said, there were no warning lights? CEL? Because even with the low oil something should've came on. And yes, spun bearings don't seize engines, it could wreck them though... So don't drive it.
