I would suspect that doing fullscreen CarPlay, not matter what version, would require that BMW allow this to be set in an update. From what I understand from using a purchased CarPlay full screen mod, it really just requires a setting to be changed. The problem is that even with something like BimmerCode it's not something you can change and requires essentially "jailbreaking" to go in and change it. With older versions you could change it with a USB stick, but now requires plugging a ENET cable into a laptop to do it.
It's a pain in the arse but going full screen on CarPlay makes it SO much better. It's a shame that BMW don't update this, it would be dead easy.
I'm very curious to see if it all works with iOS 13 but my last phone is a 6 and thus not upgradable and I'm not gonna put a beta on my main phone.
