MPGs shouldn't be measurably different if you're looking at the 6MT M240. Maybe 1mpg..maybe.

The 2016-2018 M2s have the same exact seats as the M240.

The MPE on the M2 was much of the reason why your M2 was loud. The non-MPE equipped M2 is a bit quieter. The M240 without the MPE will be slightly quieter in terms of exhaust noise.

The M240 has a softer suspension and narrower tires and wheels which makes it ride softer and reduces noise. The lack of solid rear subframe bushings in the M240 will also reduce noise slightly.
