If you're planning on heading southwest from the PCD...along the route near Birmingham, AL is Barber Motorsports Park and Motorcycle Museum. The undulating track itself is manicured like a fine golf course and the motorcycle museum is extensive.

You didn't mention when your pickup date is but there's an IndyCar race "scheduled" at Barber for the weekend of April 9-11.
As you get towards Arkansas, as jzeiler4 mentioned, there's great roads around Eureka Springs (NWC of Arkansas) as its a mecca for many annual car club pilgrimages. If you "stop over" in Eureka Springs and love German food, don't miss the Bavarian Inn Restaurant.
