Roof racks are ugly, make a ton of wind noise, are a pain to throw bikes on (especially a muddy dripping MTB), and aren't easy to pull on or off. Also they can screw up the paint pretty badly.
The hitch is just a much better solution, 1 bolt to take on and off and it acts as a bumper guard to keep you from bottoming out and crushing your exhaust (which I almost did once and the hitch saved my exhaust tips).
So I'm very pro hitch. With that said, depending on what you're carrying the hitch may not be appropriate.

Tend to agree with everything above. Plus I have a friend that drove into an underground garage, forgetting he had the rack up there and destroyed his bikes and did several thousands of damage to his car's roof. Too easy to forget.
As stated above the wind noise and lower MPG are a drag too.
